Spicy Bean And Beef Pie
- 1 lb. ground beef
- 2 to 3 cloves garlic
- 1 can condensed bean with bacon soup
- 1 jar thick picante, divided
- 1/4 c. cornstarch
- 1 Tbsp. parsley
- 1 tsp. paprika
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 can kidney beans, rinsed and drained
- 1 can black beans, rinsed and drained
- 2 c. shredded Cheddar cheese
- 3/4 c. sliced onions
- pastry double crust
- 1 c. sour cream
- 1 can olives, sliced
- Put bottom crust in pie tin.
- Cook beef and garlic.
- Combine soup, 1 cup picante, cornstarch, parsley, paprika, salt and pepper; mix well.
- Fold in beans, 1 1/4 cups cheese, 1/2 cup onions and beef mixture.
- Top with remaining pastry.
- Cut slits in top. Bake at 425u0b0 for 30 to 35 minutes.
- Garnish with sour cream, olives, picante, cheese and onions.
- Makes 8 servings.
