Zucchini Feta Pasta
- 16 ounces, weight Penne Or Desired Pasta
- 2 Tablespoons Olive Oil
- 3 cloves Garlic, Minced
- 1 whole Medium Yellow Onion, Diced
- 3 whole Zucchini, Cut Into 1/2 Inch Pieces
- 1 can (14.5 Oz. Can) Diced Tomatoes
- 8 ounces, weight Feta
- Boil pasta as directed on the box.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and diced onion and cook till onions are soft.
- Add zucchini.
- Cook until soft.
- Like potatoes, you can poke them with a fork and if it goes in easily, theyre done.
- Add diced tomatoes and season as desired.
- Mix pasta in with the sauce and veggies.
- Crumble feta over the pasta in the pan or let your crowd do it themselves.
