Lobster Thermidor
- 4 c. lobster, chopped
- 5 c. cream sauce (using half and half)
- 1 c. mushrooms, sliced
- 1 1/2 Tbsp. dry mustard
- 1 Tbsp. parsley, chopped
- 1/2 c. Parmesan cheese
- 1/4 c. dry bread crumbs
- 1/2 c. sherry wine
- 1 tsp. paprika
- 7 drops egg color (yellow food coloring)
- 1/2 tsp. each: salt and pepper
- Prepare cream sauce using egg shade for coloring.
- Combine with all the above ingredients, except cheese, paprika, sherry wine and bread crumbs.
- Fill the lobster shells with this mixture; sprinkle with mixture of cheese and bread crumbs.
- Top with paprika for color.
- Moisten tops with sherry wine.
- Bake at 400u0b0 for about 15 minutes, or until golden brown.
- Makes 4 servings.
