Zucchini Italian-Style
- 1 tablespoon olive oil
- 1 tablespoon sunflower oil
- 1 large onion, chopped
- 1 garlic clove, minced
- 5 zucchini, cut into 1/2in slices
- 23 cup chicken stock or 23 cup vegetable stock
- 12 teaspoon dried oregano
- salt and pepper
- Heat both oils in a large frying pan and fry the onion and garlic over a moderate heat for 5-6 minutes until the onion has softened and is beginning to brown.
- Add the zucchini and fry for a further 4 mins until they just begin to be flecked with brown.
- Stir frequently.
- Stir in the stock, oregano and season to taste.
- Simmer gently for 8-10 mins until the liquid has almost evaporated.
- Spoon the zucchini into a serving dish, and serve.
