Zucchini Italian-Style

  1. Heat both oils in a large frying pan and fry the onion and garlic over a moderate heat for 5-6 minutes until the onion has softened and is beginning to brown.
  2. Add the zucchini and fry for a further 4 mins until they just begin to be flecked with brown.
  3. Stir frequently.
  4. Stir in the stock, oregano and season to taste.
  5. Simmer gently for 8-10 mins until the liquid has almost evaporated.
  6. Spoon the zucchini into a serving dish, and serve.
