Stuffed Crabs
- 1 1/2 sticks butter
- 3 c. crab meat
- 2 medium onions, chopped
- 4 ribs celery
- 1 small bell pepper or 1/2 large
- 1 bunch green onions, chopped
- 1 small can evaporated milk
- 1 (8 oz.) can mushroom buttons, sliced
- 4 tsp. flour
- 3/4 c. Italian bread crumbs
- 2 eggs, beaten
- juice of 1 lemon
- cayenne pepper to taste (watch it)
- garlic salt
- Chop onions, bell pepper and celery with 1/2 stick of butter, saute in frying pan.
- Add juice from mushrooms and 4 teaspoons of butter.
- Stir.
- Add sliced mushrooms and milk.
- Stir; let cook 5 to 10 minutes on medium heat.
- Stir in cayenne pepper.
- Remove from heat and let cool.
- Add beaten eggs, lemon juice and flour.
- Stir in the crab meat and bread crumbs and cook 5 minutes.
- Stuff crab shells or pour into casserole dish.
- Brown in oven and serve.
