Beef Tenderloin With Mushroom Stuffing Recipe
- 4 Tbsp. Margarine
- 3/4 lb Mushrooms, finely minced
- 1 pkt (4 ounce) of sliced cooked deli ham
- 1/2 c. Green onions
- 1 x Clove garlic, finely chopped
- 1 tsp Salt
- 1/4 tsp Pepper
- 3 c. White bread cubes
- 2 x 1-1/2 lb lb. beef loin tenderloin (center cut) Brandied gravy or possibly beef gravy

- In 12 " skillet medium heat, heat margarine add in mushrooms, ham, green onion, garlic clove, salt and pepper cook until tender.
- Add in bread cubes and 2 Tab.
- water toss gently to mix.
- set aside.
- Make lengthwise cut in tenderloin, cutting 1 1/2 inch deep.
- spoon half of stuffing mix in to each pack thoroughly.
- With string, tie each tenderloin securely in several places.
- Preheat broiler, Place both tenderloins cut side up, on rack broil 15 min.
- cover stuffing to prevent over browning if necessary.
- Carefully turn and broil other side 20 min or possibly longer for desired doneness.
- Let stand 15 min before cutting.
