Asparagus Quiche Recipe

  1. Pastry:Sift flour and salt into a bowl, rub in butter, add in egg yolk and lemon juice and mix to a hard dough.
  2. Cover and chill 20 min.
  3. Roll dough out large sufficient to line a 25cm flan tin, trim the edges.
  4. Cover pastry with greaseproof paper and fill with dry beans or possibly rice to hold in shape while cooking.
  5. Bake in a moderate oven for 7 min, remove paper and beans and bake a further 7 min.
  6. Set aside till required.
  7. Whisk Large eggs, cream, lowfat milk and cheeses together and set aside.
  8. Slice onion and cut bacon into strips.
  9. Heat butter in a pan and cook onion and bacon for 2 min till tender.
  10. Spread onion-bacon mix proportionately over pastry.
  11. Top with well liquid removed asparagus spears.
  12. Pour over egg mix and sprinkle with paprika.
  13. Bake in a moderate oven for about 30 min or possibly till set.
  14. Serves 4.
  15. Use commercially prepared short pastry if you like.
