Asparagus Quiche Recipe
- 1 c. flour, plain
- 90 gm butter
- 1 x egg yolks
- 1 pch salt
- 1 x lemons
- 20 gm butter
- 1 tsp garlic, crushed
- 1 x onions, medium
- 250 gm asparagus tips, tinned
- 4 x Large eggs
- 1 c. cream
- 1/2 c. lowfat milk
- 1 c. grated tasty cheese
- 2 Tbsp. parmesan cheese
- 2 slc bacon
- Pastry:Sift flour and salt into a bowl, rub in butter, add in egg yolk and lemon juice and mix to a hard dough.
- Cover and chill 20 min.
- Roll dough out large sufficient to line a 25cm flan tin, trim the edges.
- Cover pastry with greaseproof paper and fill with dry beans or possibly rice to hold in shape while cooking.
- Bake in a moderate oven for 7 min, remove paper and beans and bake a further 7 min.
- Set aside till required.
- Whisk Large eggs, cream, lowfat milk and cheeses together and set aside.
- Slice onion and cut bacon into strips.
- Heat butter in a pan and cook onion and bacon for 2 min till tender.
- Spread onion-bacon mix proportionately over pastry.
- Top with well liquid removed asparagus spears.
- Pour over egg mix and sprinkle with paprika.
- Bake in a moderate oven for about 30 min or possibly till set.
- Serves 4.
- Use commercially prepared short pastry if you like.
