Tortilla Bake

  1. Preheat oven to 375 degrees.
  2. In a medium skillet, cook beef and onion until beef is brown and crumbly (about 10 minutes). Drain well.
  3. Add enchilada and tomato sauces to skillet; stir well.
  4. Cook until slightly thickened, about 10 minutes.
  5. Spoon beef mixture into a 2 quart baking dish.
  6. In a separate small bowl, combine beans and evaporated milk. Then, spread over beef mixture.
  7. Arrange whole tortilla chips around the edge of baking dish. Top casserole with crushed chips. Sprinkle cheeses over the top.
  8. Bake casserole until hot and bubbly, about 20 minutes.
