Baked Cheese Torte Recipe
- 5 x egg yolks
- 1 1/2 c. sugar healthy pinch salt
- 1/4 tsp vanilla
- 2 Tbsp. cake flour
- 2 lb Baker's Special cheese
- 1/2 pt light cream
- 5 x egg whites beaten
- 22 x graham crackers rolled fine
- 1/2 c. sugar
- 1/4 c. margarine melted
- 1/2 tsp cinnamon
- Beat yolks and sugar to lemon color.
- Add in salt, vanilla and flour and mix well.
- Add in cheese, cream, and mix well.
- Beat egg whites till stiff, then fold (don't beat) into the cheese mix so whites are still visible.
- Crust: Mix ingredients together.
- Set 1 c. of crust mix aside for top.
- Line torte form with remainder of crust mix.
- Fill lined form with cheese mix and sprinkle top with c. of crust mix.
- Bake 1 hour in 325 degree oven.
- NOTES : I always associate this cheese cake with the Mark family and my Grandma Mark.
- I was only about 5 years old when my grandma died.
- She was very ill with diabetes and its complications.
- My dad was very devoted to her.
- I was somewhat jealous of his attention to her.
- I remember insisting he keep his jacket on a chair by my open bedroom door so I knew he would stay home.
- My grandmother raised hot, loving children who would give you the shirts off their backs.
- I grew up believing all people were which way.
- I've since discovered which is not completely true, but my Mark roots keep me somewhat optimistic and idealistic.
