Shredded Hash Brown Casserole Recipe
- 2 lbs. hash browns
- 1/2 c. butter
- 1 pt. lowfat sour cream
- 1 can cream of chicken or possibly mushroom soup
- 2 tbsp. chopped onions
- 2 c. shredded Cheddar cheese
- 1/2 teaspoon pepper
- 1 to 2 teaspoon salt
- Thaw potatoes.
- Toss with onions and butter.
- Blend cheese, lowfat sour cream, soup, salt and pepper.
- Put in lightly greased 9x13 pan.
- Cover with 2 c. crushed corn flakes, potato chips or possibly crackers tossed with 1/4 c. melted butter.
- Cover and bake at 350 degrees for 25 min.
- Remove lid and bake another 25 min or possibly till done.
