salsa eggs
- 2 large eggs
- 1 dash almond milk or skim milk
- 1 salt and pepper
- 1 Cayenne pepper spice
- 1/4 cup chopped peppers, I like red and green
- 2 tbsp fat free shredded cheddar cheese
- 2 clove of garlic minced
- 2 tbsp salsa, I like pineapple Al pastor
- 1/4 cup chopped onion
- Spray frying pan with nonstick cooking spray
- Heat to medium heat
- Saute peppers and onion and garlic until tender
- Mix together eggs, milk, cayenne, s&p and cheese
- Pour into pan and cook until done to Ur desired consistency
- Plate and top with salsa
