Chicken And Sausage Gumbo

  1. Cut up chicken, season with salt, garlic salt, Season-All (seasoned salt) and lemon and pepper seasoning.
  2. Brown in small amount of Crisco.
  3. In another pan, fry sausage.
  4. Cut in bite-size pieces.
  5. Take chicken off bone and cut in bite-size pieces.
  6. In grease from chicken, saute onions, garlic and okra.
  7. If more grease is needed, use drippings from sausage.
  8. Pour off grease and make a roux with this.
  9. Add all ingredients in deep pot and add water. Amount of water is determined by how thick or thin you want this to be.
  10. Simmer about 1 hour.
  11. Serve over rice.
  12. Add gumbo file, if desired.
  13. Green salad and garlic French bread make a complete meal.
