hoisin glazed beef tenderloin

  1. preheat oven to 400...
  2. heat large skillet.
  3. season beef with salt and pepper, going heavy on the pepper.
  4. heat oil.
  5. sear beef until browned, about 8 minutes.
  6. transfer to roasting pan.
  7. roast about 30 minuted until internal temperature is 125
  8. place roast on cutting board and loosely tent with tin foil.
  9. to same skillet add mushrooms, scallion whites, garlic, ginger, 1 1/2 t salt and pepper flakes.
  10. cook until soft, 8 mins.
  11. add scallion greens and sherry and cook until liquid evaporates, about 2 minutes.
  12. slice roast, serve with veggies
