Food Hall-Style Kabocha Squash Tartare Salad

  1. Make all the ingredients ready.
  2. Cut up the kabocha squash into bite sized pieces, put on a heatproof dish, cover with plastic wrap and microwave until tender.
  3. Take the chopped up rakkyo pickles or cucumber pickles and..
  4. Mix them in with the mashed kabocha squash, as well as the boiled egg and mayonnaise...
  5. ...season with salt and pepper...
  6. and you're done!
  7. This is the version with cucumber pickles.
  8. This the version with rakkyo pickles.
