Bourbon Baby Back Ribs Recipe
- 1 x rack baby back pork ribs - (1 3/4 to 2 lbs cut 2-rib sections Salt to taste Freshly-grnd black pepper to taste
- 1 1/4 tsp grnd cumin
- 1 c. purchased barbecue sauce
- 1/4 c. minced fresh cilantro
- 2 Tbsp. chopped red onion
- 2 Tbsp. bourbon
- 2 tsp chili pwdr
- Prepare barbecue (medium heat).
- Sprinkle ribs with salt, pepper and 1/2 tsp.
- cumin.
- Place ribs, meaty-side up, on grill.
- Cover and grill 10 min.
- Meanwhile, mix barbecue sauce, cilantro, onion, bourbon, chili pwdr and remaining 3/4 tsp.
- cumin in heavy small saucepan; bring to boil, stirring occasionally.
- Place saucepan at edge of grill to keep sauce hot.
- Turn ribs meaty-side down.
- Cover and grill till cooked through, about 10 min.
- Turn ribs over again; brush meaty side generously with sauce.
- Cover and grill ribs till sauce sets thickly, about 3 min longer.
- Divide ribs between plates.
- Serve with remaining sauce.
- This recipe yields 2 servings;
- can be doubled.
- Comments: Thin slices of sweet potato can be grilled alongside the ribs, then drizzled with maple syrup.
- Have coleslaw and corn bread on the side, too.
- End with lemon meringue pie.
