Minestrone
- 1 small garlic, minced
- 1 medium onion, chopped
- 3 to 4 beef bouillon cubes
- 2 medium potatoes, cubed
- 16 oz. can crushed tomatoes
- 2 stalks celery, sliced
- 2 medium carrots, sliced
- 1 (15 1/2 oz.) can undrained kidney beans
- 1 Tbsp. oil
- 4 c. water
- 2 c. (1/2 lb.)green beans
- 1/2 c. elbow macaroni
- 1/4 tsp. oregano
- 1/4 to 1/2 tsp. garlic powder
- 1/4 tsp. pepper
- Saute onion in oil in large saucepan.
- Add all ingredients except macaroni and green beans.
- Cook, covered, over medium-low heat for 45 minutes.
- Add beans and macaroni.
- Cook until macaroni is tender, about 15 minutes.
- Serve with Parmesan cheese.
- Makes 2 1/2 quarts.
