Vegetable Basquaise
- 1 tbsp. olive oil
- 1 small minced
- 3 clove garlic
- 2 bell peppers (1 red and 1 green)
- 2 c. chopped tomatoes
- 13 c. green olives
- 13 c. chopped fresh basil
- 1/2 tsp. salt
- In 10-inch skillet, heat olive oil over low heat.
- Add onion and garlic and cook, stirring frequently about 7 minutes, or until onion is tender.
- Stir in peppers and cook, stirring frequently, 8 to 10 minutes, or until soft.
- Add tomatoes with their juice, olives, basil, and salt and bring to a boil.
- Reduce to a simmer and cook about 10 minutes, or until lightly thickened.
