Vegetable Basquaise

  1. In 10-inch skillet, heat olive oil over low heat.
  2. Add onion and garlic and cook, stirring frequently about 7 minutes, or until onion is tender.
  3. Stir in peppers and cook, stirring frequently, 8 to 10 minutes, or until soft.
  4. Add tomatoes with their juice, olives, basil, and salt and bring to a boil.
  5. Reduce to a simmer and cook about 10 minutes, or until lightly thickened.
