Artichoke Dressing
- 8 oz. olive oil
- 2 cans artichoke hearts, broken in pieces
- 5 ribs celery
- 8 large pieces garlic
- 1 1/2 c. Italian cheese
- 8 oz. Italian bread crumbs
- lemon
- salt and pepper to taste
- In a large pot, put about 6 ounces of olive oil.
- Chop celery and garlic and add to olive oil.
- Cook until clear.
- Add artichoke hearts, saving a little of the liquid from the artichoke can.
- Add bread crumbs a little at a time until fairly stiff.
- Add the extra olive oil and water if needed.
- Put 1 cup cheese in mixture and slowly cook on a low fire for 1/2 hour.
- Salt and pepper to taste (be careful with the salt as the cheese is salty also).
- Place dressing in casserole dish and cover with the rest of the cheese. Slice lemon on top of dressing.
- Bake for about 1/2 hour on a low setting.
