White Beans With Sage and Tomatoes

  1. Combine beans and enough water to cover by 2 inches in a saucepan.
  2. Bring to a boil, remove from heat, and let stand for 1 hour.
  3. Drain.
  4. Combine beans and water to cover, bacon, sage, leek, and oil and bring to a boil.
  5. Transfer to a baking dish, cover, and bake at 300 degree for 2 hours (check the water level occasionally and add more if needed.)
  6. Add the tomatoes and bake, dcovered, for 30 minutes longer.
  7. Stir in the vinegar, salt and pepper.
