Pickled Beets Recipe

  1. Drain beets, reserving liquid (1 1/2 c.).
  2. Place beets in 1 1/2 to 2 qt jar.
  3. In medium saucepan, combine vinegar, sugar, salt, cloves, peppercorn, bay leaf, and reserved liquid.
  4. Bring to a boil.
  5. Reduce heat and simmer uncovered 5 min.
  6. Add in onions to jar.
  7. Pour warm liquid over beets and onions.
  8. Chill covered several hrs.
