Moist! Apple & Yogurt Cake

  1. Peel the apples and cut into 5mm thick quarters.
  2. Sprinkle with the lemon juice and set aside.
  3. Crack the eggs into a bowl and beat with a whisk.
  4. Add the yogurt and mix round and round.
  5. Add the sugar and mix round and round again.
  6. Stir in the oil until it's all mixed together.
  7. Combine the cake flour and baking power, and sift into the bowl from Step 2.
  8. Using a rubber spatula, fold the ingredients together.
  9. Add the sliced apples and mix until evenly distributed.
  10. Line a pound cake pan with cooking paper and pour the batter into it.
  11. Bake for 40 minutes in an oven preheated to 190C.
  12. When a toothpick or skewer inserted into the center comes out clean, it is done.
