Gourmet Peach Shortcake
- 1/4 c. butter (room temperature)
- 1 c. sugar
- 2 eggs
- 1 tsp. coconut flavor
- 1 1/2 c. flour
- 1/4 tsp. salt
- 2 tsp. baking soda
- 1/2 c. whipping cream
- 1 c. toasted coconut
- 1 recipe Peach Nectar
- 1 recipe White Chocolate
- 3 beautifully ripe peaches, sliced thin
- Beat together butter and sugar.
- Add eggs and flavoring. Stir in dry ingredients alternating with cream.tpoon onto a coated 9-inch round pan.
- Bake at 325u0b0 for 30 minutes.
- Cool in pan for 10 minutes, then turn out onto a rack.
- Prepare Peach Nectar and White Chocolate Mousse and assemble as follows.
- Slice cake into 8 wedges and then slice the wedges horizontally.
- Spoon nectar onto plate; place bottom half of cake wedge on nectar, and then layer with more nectar, mousse and sliced peaches.
- Top with other half of wedge and dollop of White Chocolate Mousse and garnish with mint leaves or raspberries.
- Serves 8.
