Gourmet Peach Shortcake

  1. Beat together butter and sugar.
  2. Add eggs and flavoring. Stir in dry ingredients alternating with cream.tpoon onto a coated 9-inch round pan.
  3. Bake at 325u0b0 for 30 minutes.
  4. Cool in pan for 10 minutes, then turn out onto a rack.
  5. Prepare Peach Nectar and White Chocolate Mousse and assemble as follows.
  6. Slice cake into 8 wedges and then slice the wedges horizontally.
  7. Spoon nectar onto plate; place bottom half of cake wedge on nectar, and then layer with more nectar, mousse and sliced peaches.
  8. Top with other half of wedge and dollop of White Chocolate Mousse and garnish with mint leaves or raspberries.
  9. Serves 8.
