Asian Tomato & Rice Soup

  1. Heat 1 tbsp oil in a pan, then cook the garlic, ginger, chili and lemon grass for a couple of minutes.
  2. Add the spices and cook for a minute, then tip in the tomatoes, tamarind and 2.5 cups water and simmer for 5 minutes.
  3. Blend until smooth.
  4. Heat up again and add the rice, then simmer for 10-12 minutes or until the rice is cooked.
