sig's Blue, Parmesan, Goats and Cheddar Cheese Mini Muffins
- 175 grams self-raising flour
- 1 cup butter ( 80g )
- 1/2 tsp vegetable stock powder , ( 1 teaspoon stock powder is equal to 1 small stock cube )
- 75 grams grated Cheddar cheese
- 75 grams blue cheese
- 40 grams finely grated parmesan cheese
- 40 grams soft goats cheese
- 1 egg,lightly beaten
- 250 ml milk
- 2 tsp Dijon mustard
- 3 green onions (spring onion) ,finely chopped
- Grease a 24 hole mimi muffin or mini yorkshire pudding pan.
- Sift the flour and the 1/2 teaspoon ( 3ml) into a large bowl and rub in the butter.Stir in remaining ingredients.
- Spoon the mixture into the prepared pan.
- bake in modeate hot oven for about 20 minutes.
- these are truly cheesy little bites and ideal for parties or snacks .
