Orange Oat-Bran Muffins(Makes 24 Muffins.)
- 1 (1 lb.) box oat bran
- 1/2 c. chopped walnuts
- 1 c. granulated sugar
- 2 Tbsp. baking powder
- 3 Tbsp. grated orange peel
- 1 (12 oz.) can (1 1/2 c.) frozen concentrated orange juice
- 1 1/2 c. skim milk
- 2 Tbsp. canola or rice bran oil
- 2 Tbsp. light corn syrup
- 1 container Egg Beaters (8 oz. = 4 eggs)
- club soda
- 2 very ripe bananas, pureed (this should measure 1 c.)
- 3/4 c. sugar
- 1 Tbsp. vanilla
- 1 Tbsp. canola oil
- 1/2 c. chopped pitted dates
- 1/2 c. chopped walnuts
- 2 c. oat bran
- 2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 3 egg whites
- Preheat oven to 350u0b0.
- Spray an 8 1/2 x 4 1/2-inch loaf pan with Pam or Baker's Joy.
- In a mixing bowl or food processor, blend pureed bananas with 1/2 cup of the sugar, vanilla and oil; mix until well combined.
- Stir in dates and nuts.
