Fettuccini With Spinach and Cream
- 2 tablespoons butter
- 3 tablespoons finely chopped onions
- 1 12 cups heavy cream
- 8 ounces fresh spinach
- 34 teaspoon salt
- 14 teaspoon pepper
- 1 lb fresh fettuccine
- 3 tablespoons chopped fresh basil
- 34 cup grated parmesan cheese
- In large saucepan, melt butter.
- Add onion and cook until softened.
- Add cream and bring to a boil.
- Cook 3 minutes to thicken.
- Do not let boil over.
- Add spinach and cook until wilted.
- Season with salt and pepper.
- Cook pasta in large pot of boiling salted water.
- Drain.
- Toss with spinach, cream and fresh basil.
- Serve topped with Parmesan.
