Easy Zucchini Sausage Bake

  1. Remove sausage from casing (I don't remove); cook with onion in 10-inch skillet until sausage loses redness.
  2. Remove and drain on paper towel.
  3. Saute zucchini in skillet drippings until transparent.
  4. Cover; cook 5 minutes or until almost done and reserve.
  5. Combine half of tomato sauce with rice and sausage mixture.
  6. Add salt and mix well.
  7. Put in 7 1/2 x 12 x 2-inch baking dish.
  8. Arrange slices of zucchini over top.
  9. Sprinkle with Mozzarella and Parmesan; spoon remaining tomato sauce over all. Bake, covered, at 350u0b0 for 20 minutes.
  10. Serves 4 to 6.
