Blaukraut (Braised Red Cabbage) Recipe

  1. Remove the 2 outer leaves of the cabbage.
  2. Cut the cabbage in half.
  3. Core it and cut into thin julienne.
  4. Put cabbage in bowl.
  5. Sprinkle with salt and red wine vinegar.
  6. Toss and let stand for 2 hrs.
  7. Saute/fry diced onions in butter.
  8. Add in the apple and sugar.
  9. Saute/fry lightly.
  10. Add in strained cabbage to saute/fry mix.
  11. Reserve the liquid.
  12. Stir for several min.
  13. Then add in strained liquid, red wine, chicken stock, jam, cinnamon, cloves, bay leaf and cook for approximatley 40 min in a covered heavy bottomed pan
  14. Remove cinnamon stick, cloves and bay leaf.
  15. Season with salt and pepper.
