Pepperoni Calzones
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 (3 1/2 oz.) pkg. sliced pepperoni
- 2 slightly beaten eggs
- 1 c. pizza sauce
- 1/4 c. grated Parmesan cheese
- 1 tsp. dried basil, crushed
- 1/8 tsp. garlic powder
- 1 (10 oz.) pkg. refrigerated pizza dough
- 1 (4 oz.) pkg. (1 c.) shredded Mozzarella cheese
- cooking oil
- 1 Tbsp. grated Parmesan cheese
- Cook spinach according to package directions.
- Drain, squeezing out excess liquid.
- Chop pepperoni.
- Combine spinach, eggs, pepperoni, 1/4 cup of the pizza sauce, the 1/4 cup Parmesan cheese, basil and garlic powder.
- Unroll refrigerated dough.
- Press into a 15 x 10-inch rectangle.
- Cut into quarters.
- Sprinkle Mozzarella cheese onto half of each quarter.
- Spoon spinach mixture atop. Fold dough over mixture.
- Seal edges.
- Place on a greased baking sheet.
- Brush with oil.
- Sprinkle with the 1 tablespoon Parmesan. Cut small slits on top of each.
- Bake in a 450u0b0 oven for 10 to 15 minutes or until golden.
- Heat and pass remaining pizza sauce. Serves 4.
