Soy Glazed Salmon With Noodles

  1. Heat oven to 400.
  2. In a large pot boil the green beans for two minutes then transfer from pot with slotted spoon.
  3. Add noodles to boiling water and cook according to package directions.
  4. Combine 3 T soy sauce, garlic, minced ginger, and 1 T cooking wine.
  5. Add the salmon to this mixture and turn to coat.
  6. Scatter scallions and sliced ginger on top of salmon and bake 20 minutes.
  7. In a small pot combine vinegar, lemon juice, sugar, remaining soy sauce, and wine, stirring until the sugar dissolves.
  8. Bring to a boil and reduce by 1/2 (about 3 minutes).
  9. Divide the noodles and salmon onto 4 plates and drizzle with the glaze.
