Soy Glazed Salmon With Noodles
- 8 ounces green beans, cut
- 8 ounces soba noodles
- 12 cup reduced sodium soy sauce
- 3 tablespoons reduced sodium soy sauce
- 2 garlic cloves
- 1 tablespoon ginger, minced
- 2 tablespoons ginger, sliced thin
- 2 tablespoons white wine (or rice wine or sherry)
- 16 ounces salmon fillets
- 3 scallions, cut
- 14 cup rice vinegar
- 2 tablespoons lemon juice
- 1 tablespoon sugar
- Heat oven to 400.
- In a large pot boil the green beans for two minutes then transfer from pot with slotted spoon.
- Add noodles to boiling water and cook according to package directions.
- Combine 3 T soy sauce, garlic, minced ginger, and 1 T cooking wine.
- Add the salmon to this mixture and turn to coat.
- Scatter scallions and sliced ginger on top of salmon and bake 20 minutes.
- In a small pot combine vinegar, lemon juice, sugar, remaining soy sauce, and wine, stirring until the sugar dissolves.
- Bring to a boil and reduce by 1/2 (about 3 minutes).
- Divide the noodles and salmon onto 4 plates and drizzle with the glaze.
