quick cranberry muffins
- 2 cup baking mix (like Bisquick)
- 3/4 cup whole berry cranberry sauce
- 1/3 cup orange juice
- 1 eggs
- 1/4 cup sugar
- 1/4 cup vegetable oil
- 1/4 tsp cinnamon
- 3 tbsp brown sugar
- 1 tbsp baking mix
- Preheat oven to 400.
- Line a muffin pan with 12 paper liners.
- Gently mix all muffin ingredients.
- Don't over mix or your muffins will be tough.
- Spoon into muffin pan.
- Combine 1 tablespoon baking mix and brown sugar.
- Sprinkle over muffins.
- Bake 16 minutes or until tops spring back when gently touched.
