quick cranberry muffins

  1. Preheat oven to 400.
  2. Line a muffin pan with 12 paper liners.
  3. Gently mix all muffin ingredients.
  4. Don't over mix or your muffins will be tough.
  5. Spoon into muffin pan.
  6. Combine 1 tablespoon baking mix and brown sugar.
  7. Sprinkle over muffins.
  8. Bake 16 minutes or until tops spring back when gently touched.
