Chicken Casserole
- 4 c. cooked chicken, cut up (leftover turkey works well also)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1/3 c. mayonnaise
- 2 Tbsp. fresh lemon juice
- 2 pkg. frozen asparagus or chopped broccoli
- 1 can sliced mushrooms
- 1 Tbsp. onion, finely chopped
- 1 c. sharp cheddar cheese, grated
- slivered almonds
- Place a layer of meat on the bottom of a glass baking dish. Mix the soups, mayonnaise and lemon juice.
- Pour 1/2 of the mixture over the meat.
- Spread asparagus (or broccoli), mushrooms and onions over the mixture.
- Season with salt and pepper.
- Pour remaining soup mixture over vegetables.
- Sprinkle grated cheese and slivered almonds on top.
- Bake at 350 degrees for 20-30 minutes.
