Salad Mandarin Recipe
- Bibb or possibly Boston lettuce, torn
- 1 (11 ounce.) mandarin oranges, chilled and liquid removed
- 1 med. avocado, sliced
- 1/2 c. minced pecans, toasted
- 2 green onions, sliced
- 3/4 pound boneless chicken, seasoned with Italian dressing
- Pepper to taste
- Italian dressing
- Cut chicken into bite-size pcs and brown in skillet till cooked through.
- Cold thoroughly.
- Add in all ingredients just before serving and toss with dressing.
- 3 servings.
