Minute Egg Dressing
- 1 1/2 slices bread
- 1 egg
- 1/2 c. olive or salad oil
- 1/4 tsp. red pepper or to taste
- 1/4 tsp. salt or to taste
- 1/2 Tbsp. butter or margarine
- 1 clove garlic
- 3/4 c. grated Italian cheese (Parmesan)
- 1 Tbsp. vinegar (approximately)
- Cut bread into tiny cubes.
- Place butter in iron frying pan over lowest heat.
- Add bread; cook until crisp, stirring occasionally to prevent burning.
- Put egg into bowl; mince garlic and add.
- Beat well with rotary beater.
- Add oil, a little at a time; continue beating until mixture begins to thicken.
- (In order to get the mixture to thicken, it may be necessary to use a little less or a little more than 1/2 cup oil.)
- Add cheese, red pepper and salt; beat well.
- Add vinegar; beat well.
- Just before serving, add bread cubes.
- Pour over lettuce; toss well.
- Serves 4.
