Minute Egg Dressing

  1. Cut bread into tiny cubes.
  2. Place butter in iron frying pan over lowest heat.
  3. Add bread; cook until crisp, stirring occasionally to prevent burning.
  4. Put egg into bowl; mince garlic and add.
  5. Beat well with rotary beater.
  6. Add oil, a little at a time; continue beating until mixture begins to thicken.
  7. (In order to get the mixture to thicken, it may be necessary to use a little less or a little more than 1/2 cup oil.)
  8. Add cheese, red pepper and salt; beat well.
  9. Add vinegar; beat well.
  10. Just before serving, add bread cubes.
  11. Pour over lettuce; toss well.
  12. Serves 4.
