Egg, Poblano and Avocado Scramble (Ww)
- 2 teaspoons olive oil
- 2 poblano peppers, cut into 1/2 inch strips
- 1 onion, chopped
- 1 cup Egg Beaters egg substitute
- 2 tablespoons cilantro, chopped
- 14 teaspoon ground cumin
- 14 teaspoon salt
- 18 teaspoon pepper
- 12 avocado, peeled, pitted, and diced
- Heat oil in sillit over medium high heat.
- Add chilies and onion, stirring occasionally for 5 minutes or until vegetables soften.
- Meanwhile whisk together egg beaters, cilantro, cumin, salt and pepper in bowl.
- Pour egg mixture over chili mixture.
- Reduce heat and cook, stirring frequently until eggs are set (3-5 minutes).
- Remove from heat and stir in avocado.
