Indian Bread (Chappatis)

  1. In a bowl, mix together flour, salt and a little water at a time.
  2. Add 1 tbls.
  3. ghee.
  4. Knead with hands until dough is soft and all water used.
  5. Let stand for 20 minutes.
  6. Heat a greased heavy griddle or frying pan.
  7. Shape dough into small tennis ball sized pieces, dust with flour and roll out
  8. until about 5 inches in diameter.
  9. Place on hot griddle and cook for a few minutes on each side.
  10. When bubbles appear on the surface, turn and cook other side again.
  11. Gently press down edges with a clean cloth, so bread cooks evenly.
  12. When it has brown spots, bread is ready.
  13. Remove from pan, smear with ghee.
