Corn Bread Pie
- 1 lb. ground beef
- 1 lg. onion, chopped
- 1 can (10-1/2) tomato soup
- 2 cups water
- 1-1/2 tsp. salt
- 3/4 tsp. ground black pepper
- 1 tbsp. chili powder
- 1 cup whole kernel corn, drained
- 1/2 cup green pepper, chopped
- 3/4 cup yellow corn meal
- 1 tbsp. sugar
- 1 tbsp. all purpose flour
- 1-1/2 tsp. baking powder
- 1 egg, beaten
- 1/2 cup milk
- 1 tbsp. canola oil
- In a large skillet, brown beef and onion; drain well.
- Add the soup, water, 1 teaspoon salt, pepper, chili powder, corn and green pepper; mix well and simmer for 15 minutes.
- Pour into greased casserole.
- Sift the corn meal, sugar,flour, remaining salt and baking powder in a bowl.
- Add the egg, milk and oil; stir lightly.Spread by spoonfuls over beef mixture.
- Bake at 350 degrees for 18-20 minutes.
