Quickie Saag
- 9 ounces, fluid Package Frozen, Chopped Spinach, Thawed
- 1- 1/2 Tablespoon Olive Oil
- 2 whole Garlic Cloves, Minced
- 1/4 cups Minced Red Onion
- 1/2 teaspoons Mustard Seeds (or 1/4 Teaspoon Ground Mustard)
- 12 cubes Paneer
- 2 pinches Ground Cayenne Pepper (or More, If You Can Handle The Heat)
- 1 pinch Ground Nutmeg
- 1/2 teaspoons Kosher Salt
- Black Pepper To Taste
- 1/2 cups Water
- Start by squeezing out water from spinach.
- Set aside.
- In a medium non-stick saute pan, heat oil over medium heat until it shimmers.
- Add garlic and mix for a second or two.
- Add onion and mustard and saute for a minute or two.
- Dont let the garlic burn.
- Add paneer cubes, cayenne, nutmeg, kosher salt, and a little black pepper, frying for a few minutes to get a little color on the cheese.
- Add the spinach and water and bring to a boil.
- Cover the pan and cook over low heat for 15-20 minutes, stirring occasionally.
- I like mine with cumin-scented rice.
- It is sooo good.
