Quickie Saag

  1. Start by squeezing out water from spinach.
  2. Set aside.
  3. In a medium non-stick saute pan, heat oil over medium heat until it shimmers.
  4. Add garlic and mix for a second or two.
  5. Add onion and mustard and saute for a minute or two.
  6. Dont let the garlic burn.
  7. Add paneer cubes, cayenne, nutmeg, kosher salt, and a little black pepper, frying for a few minutes to get a little color on the cheese.
  8. Add the spinach and water and bring to a boil.
  9. Cover the pan and cook over low heat for 15-20 minutes, stirring occasionally.
  10. I like mine with cumin-scented rice.
  11. It is sooo good.
