Pizza Pronto
- 1 (20 1/2 oz.) store bought refrigerated cheese pizza (crust plus separate pkg. of tomato sauce and shredded Mozzarella cheese)
- 1 Tbsp. olive oil
- 2 large zucchini, thinly sliced (about 4 c.)
- 1/4 tsp. freshly ground black pepper
- 1/8 tsp. salt
- 4 1/2 oz. thinly sliced pepperoni
- 1 small roasted red pepper from 7 oz. jar, coarsely chopped
- Heat oven to 425u0b0.
- Spread pizza sauce over crust to within 1-inch of edge.
- Sprinkle with three quarters of cheese.
- Place in oven according to package directions.
- Bake for 7 minutes. Meanwhile, in 12-inch skillet over medium high heat, heat oil. Add zucchini, pepper and salt.
- Cook uncovered for 3 minutes until zucchini are almost tender, uncovering to stir twice.
- Remove pizza from oven, maintaining oven temperature.
- Using slotted spoon, spoon zucchini over pizza, alternating with pepperoni slices.
- Sprinkle with remaining cheese and chopped roasted red pepper.
- Bake for 3 to 4 minutes until cheese melts.
