Crispy Onion Chicken

  1. Preheat oven to 350 degrees.
  2. Cut chicken into 6 single breasts.
  3. Combine onions and croutons in your food processor.
  4. You may also add salt, pepper, or other spices to the crumb mixture.
  5. Pour crumb mixture into a medium-sized bowl.
  6. Beat the 2 eggs and place in a separate medium-sized bowl.
  7. Dip each piece of chicken into the egg and then into the crumb mixture.
  8. Make sure to coat well.
  9. You can place them in a baking dish and bake for about 20 minutes.
  10. Or if you prefer a crispier crust like I do, you can heat about one inch of oil in a skillet and fry the chicken for about 2 minutes on each side first.
  11. Then remove from the oil and place in a baking dish and allow to finish cooking in the oven for about 10 minutes.
