Crispy Onion Chicken
- 3 whole Chicken Breasts
- 2 whole Eggs
- 5 ounces, weight Croutons
- 6 ounces, weight French Fried Onions
- Preheat oven to 350 degrees.
- Cut chicken into 6 single breasts.
- Combine onions and croutons in your food processor.
- You may also add salt, pepper, or other spices to the crumb mixture.
- Pour crumb mixture into a medium-sized bowl.
- Beat the 2 eggs and place in a separate medium-sized bowl.
- Dip each piece of chicken into the egg and then into the crumb mixture.
- Make sure to coat well.
- You can place them in a baking dish and bake for about 20 minutes.
- Or if you prefer a crispier crust like I do, you can heat about one inch of oil in a skillet and fry the chicken for about 2 minutes on each side first.
- Then remove from the oil and place in a baking dish and allow to finish cooking in the oven for about 10 minutes.
