Beef Summer Sausage Recipe
- 2 lb low-fat grnd beef
- 1 tsp black pepper
- 1/2 tsp garlic pwdr
- 1 Tbsp. Liquid Barbecue Smoke
- 1 Tbsp. mustard seed
- 1 Tbsp. Morton's Tender Quick Salt
- 3/4 c. water
- Combine all ingredients.
- Divide mix in half and place each half on a sheet of foil.
- Shape the mix into logs (like salami) and roll up in the foil.
- Chill overnight or possibly up to 24 hrs.
- Remove from foil, lay on wire rack on cookie sheet and bake at 350 F for one hour.
- Re-wrap in foil and chill or possibly freeze till ready to serve.
- Use a spicy mustard as a dipping sauce.
