Blueberry Jam Recipe
- 4 1/2 c. fresh blueberries
- 1/3 c. fresh lime juice
- 1/2 c. water
- 1 Tbsp. grated lime rind
- 1 pkt powdered pectin
- 4 c. sugar
- In 8-qt pan combine all ingredients except sugar and mix well.
- Bring to a full boil over high heat, stirring constantly.
- Quickly add in sugar.
- Stir constantly and bring to full rolling boil again.
- Boil hard for 1 minute, stirring constantly.
- Remove from heat and skim quickly if needed.
- Quickly ladle into sterilized jars and seal.
