Frozen Fruit Salad
- 1 (8 oz.) pkg. cream cheese
- 3 Tbsp. mayonnaise
- 2 to 3 oranges, halved, then sections cut out individually
- 1 small can pineapple chunks, cut into smaller bits, then drained
- 12 to 14 stewed apricots, snipped small
- 1 banana, cut into small bites
- other fruit (in season and/or for color) in small pieces
- 1 pt. heavy whipping cream
- powdered sugar to taste
- Beat the cheese and mayonnaise together until smooth.
- Combine it with drained fruits.
- Whip the cream in chilled bowl until soft peaks form.
- Blend in powdered sugar to taste.
- Fold fruit mixture into whipped cream.
- Pour and smooth into a 9 x 13-inch freezer-proof pan.
- Freeze for 2 to 3 hours until firm.
- Cut into squares and serve with garnish.
