Butterscotch Zucchini Bars
- 1 c. brown sugar, packed
- 1/3 c. margarine or butter, melted
- 1 egg
- 1 Tbsp. water
- 1 tsp. vanilla
- 1 c. flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/8 tsp. baking soda
- 3/4 c. shredded unpeeled zucchini
- 1/2 c. chopped nuts (optional)
- 1/2 c. butterscotch chips
- Heat oven to 350u0b0.
- Combine sugar, margarine, egg, water and vanilla.
- Mix well.
- Stir in flour, baking powder, salt and baking soda.
- Mix well. Stir in zucchini and nuts.
- Spread in greased and floured 9-inch square or round pan.
- Sprinkle with butterscotch chips. Bake for 30 to 35 minutes or until toothpick comes out clean. Cool. Cut into bars.
- Sprinkle with powdered sugar, if desired.
