Japanese-style Pasta with Canned Sardines and Sudachi Citrus

  1. Boil water.
  2. Add salt and cook the pasta.
  3. While the pasta is cooking, chop the green onion and slice the sudachi.
  4. Mince the garlic roughly.
  5. Remove the seeds from the red chili pepper.
  6. Pour the oil from the canned sardines into a pan.
  7. Add the garlic and red chili pepper.
  8. When it's about 3 minutes until the pasta is done, turn the heat on.
  9. When the garlic is fragrant, add 2 ladles of cooking water from the pasta.
  10. Mix and emulsify, then add the sardines.
  11. Salt and pepper lightly.
  12. Toss the cooked pasta into the pan.
  13. Toss with the sauce.
  14. Turn the heat off, and drizzle about 1/2 teaspoon of soy sauce.
  15. Dish it up, and top with lots of green onion.
  16. Serve with sudachi, which you squeeze over the pasta right before eating.
