Stuffed Green Peppers
- 4 medium green peppers
- 2 1/2 slices bread
- 2 Tbsp. chopped onion
- 2 Tbsp. chopped celery
- 2 Tbsp. butter
- 1/2 lb. ground beef
- 1 bouillon cube
- 1/3 c. hot water
- 1/2 c. tomato juice
- 1/3 c. buttered fine crumbs
- Parboil peppers for a few minutes.
- Cut bread into 1/2-inch cubes and toast.
- Saute onion and celery in butter 2 minutes.
- Add beef and saute, stirring, until done.
- Dissolve bouillon cube in hot water and add it and the tomato juice to meat mixture.
- Heat thoroughly.
- Fold in bread cubes.
- Fill peppers with hot mixture. Top with buttered crumbs.
- Bake in greased shallow dish in 350u0b0 oven for 15 minutes, then in 400u0b0 oven for 5 to 10 minutes to brown top.
- Serve hot.
