Cranberry Meatloaf
- 1 beaten egg
- 12 cup milk
- 1 cup seasoned stuffing mix
- 13 cup finely chopped onion
- 12 teaspoon salt
- 14 teaspoon pepper
- 1 lb ground beef
- 34 cup whole cranberry sauce
- 13 cup ketchup
- In bowl, combine egg, milk, stuffing mix, onion, parsley salt and pepper.
- Add ground meats; mix well.
- Divide mixture in half.
- Shape each half into a loaf and place in loaf pans.
- Bake, uncovered, in a 350F oven for 45 minutes.
- Drain off excess fat.
- In a saucepan, combine cranberry sauce and ketchup; heat through.
- Spoon some of the sauce over loaves.
- Bake 15 minutes more.
- Reheat remaining sauce and serve with meat loaf.
