Taco Soup
- 2 lbs lean ground beef
- 2 tablespoons jalapenos, fresh and chopped (I use at least 2)
- 3 cups beef broth
- 2 cups V8 vegetable juice
- 2 cups tomatoes, peeled, seeded and diced
- 2 tablespoons chili powder
- 1 teaspoon salt
- 2 tablespoons cumin
- 1 large onion, chopped
- 3 garlic cloves, chopped
- cheddar cheese, grated
- scallion, sliced
- corn tortilla strips
- sour cream
- salsa
- avocado, sliced
- In a dutch oven or large kettle, fry ground beef.
- Add peppers, onion and garlic.
- Saute until tender.
- Add the tomatoes, broth, juice and seasonings.
- Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Pour soup into bowls.
- Garnish.
