Mary'S Yeast Rolls
- 2 c. milk
- 2 pkg. active dry yeast
- 1/2 c. warm water (110~ to 115~)
- 1/2 c. sugar
- 6 Tbsp. shortening
- 2 tsp. salt
- 6 to 8 c. sifted flour
- 2 eggs, well beaten
- Scald milk.
- Soften yeast in warm water and let stand 5 to 10 minutes.
- Pour scalded milk over sugar, shortening and salt in a large bowl.
- When lukewarm, stir mixture.
- Add 1 cup flour and softened yeast mixture; mix well.
- Add 3 cups flour, beat until smooth.
- Beat in eggs.
- Then add enough remaining flour to make a soft dough.
- Turn dough onto a lightly floured surface.
- Let rest for 5 to 10 minutes, before starting to knead.
- Knead dough for about 5 to 8 minutes.
- Form into a large ball.
- Place in large greased bowl.
- Cover and let stand in a warm place until dough is doubled (about 1 hour).
