Galway Bay Delight

  1. Dry scallops and shrimp on paper towels.
  2. In a large pan heat oil and Irish Mist; sear shellfish until 3/4 done, about 3 minutes, turning once.
  3. Remove and keep warm.
  4. Add onion and mushrooms to pan; cook until limp.
  5. Stir in cream and cook gently until liquid is reduced an slightly thickened.
  6. Season to taste with salt and pepper.
  7. Return scallops and shrimp to pan to finish cooking, 2 minutes.
  8. Stir in parsley.
